Do I need notarized power of attorney as sole administrator?

No. If you are the sole administrator of an SL/SLU, the articles of incorporation or a simple letter signed by you are sufficient. Notarized power of attorney is only necessary for large companies with multiple administrators.

Can I use documents from months ago?

For proof of address (bills, statements), they must be from the last 3 months. Identity documents (ID, CIF) and articles of incorporation can be from any date as long as they're valid.

My company operates from my home, what do I do?

Perfectly valid. Use a personal bill (electricity, water, internet) as proof of company address. Just add a note indicating: "The company operates from private residence".
